Ingredients
- 1 Potato Small
- ½ teaspoon Vanilla Extract
- 1 pound Powdered Sugar
- Peanut Butter Enough for a thin layer
- 1 Banana Optional - for flavor variation
Instructions

1Peel the potato and place it in a small pot.

2Cover with water and boil until the potato is fully tender.

3Remove from water and place in a bowl.

4Mash the potato with a fork until completely smooth. It should mash easily.

5Stir in ½ teaspoon vanilla and mix well.

6Optional Step: Add a small amount of very ripe mashed banana to the potato mixture for flavor variety.

7Begin adding powdered sugar a little at a time. The mixture will get very thin at first—this is normal. Keep adding powdered sugar slowly so it doesn’t puff everywhere.

8Continue adding powdered sugar until the mixture forms a soft dough that is pliable but not sticky. This usually takes close to 1 pound of powdered sugar. If the dough becomes too dry, add just a splash of milk to soften it.

9Lay down a sheet of wax paper and dust it lightly with powdered sugar.

10Place the dough on the paper and dust a rolling pin with powdered sugar.

11Roll the dough out into a rectangle—thin, but not paper-thin.

12Starting from one long edge, roll the candy up tightly (like cinnamon rolls), using the wax paper to help lift and guide the roll.

13Once rolled, discard the wax paper.

14Slice the roll into rounds as thick as you like—thinner slices are usually best because the candy is very sweet.

15Place slices in a tin lined with wax paper.

16Add wax paper between layers to prevent sticking.
