Ingredients

  • 1 Potato Small
  • ½ teaspoon Vanilla Extract
  • 1 pound Powdered Sugar
  • Peanut Butter Enough for a thin layer
  • 1 Banana Optional - for flavor variation

    Peel the potato and place it in a small pot.

    Cover with water and boil until the potato is fully tender.

    Remove from water and place in a bowl.

    Mash the potato with a fork until completely smooth. It should mash easily.

    Stir in ½ teaspoon vanilla and mix well.

    Optional Step: Add a small amount of very ripe mashed banana to the potato mixture for flavor variety.

    Begin adding powdered sugar a little at a time. The mixture will get very thin at first—this is normal. Keep adding powdered sugar slowly so it doesn’t puff everywhere.

    Continue adding powdered sugar until the mixture forms a soft dough that is pliable but not sticky. This usually takes close to 1 pound of powdered sugar. If the dough becomes too dry, add just a splash of milk to soften it.

    Lay down a sheet of wax paper and dust it lightly with powdered sugar.

    Place the dough on the paper and dust a rolling pin with powdered sugar.

    Roll the dough out into a rectangle—thin, but not paper-thin.

    Starting from one long edge, roll the candy up tightly (like cinnamon rolls), using the wax paper to help lift and guide the roll.

    Once rolled, discard the wax paper.

    Slice the roll into rounds as thick as you like—thinner slices are usually best because the candy is very sweet.

    Place slices in a tin lined with wax paper.

    Add wax paper between layers to prevent sticking.
