Ingredients
Cake
- 1 box French Vanilla Super Moist Cake Mix
- 1 ½ teaspoons Baking Powder
- ¼ teaspoon Baking Soda
- ¼ teaspoon Salt
- 15 ounces Ricotta Cheese
- 4 Egg
- ½ cup Olive Oil
- ½ cup Almond Extract
- ¾ cup Heavy Cream
Frosting
- 1 cup Confectioners Sugar
- 3 tablespoons Heavy Cream or enough to make it pourable
- ½ teaspoon Vanilla Extract
- ½ teaspoon Almond Extract
Instructions

1Mix the cake mix with baking powder, baking soda and salt in a bowl.

2In another bowl beat the ricotta, eggs, olive oil, almond extract and heavy cream.

3Start beating in the dry ingredients and combine well.

4Transfer to a 9" prepared springform pan and bake at 325 for about an hour.

5Let cool completely before removing from pan.
Frosting

1Mix the confectioners sugar with the heavy cream a little at time until it's pourable and stir in the extracts.

2Pour over the cake and sprinkle with non pareils.
