Ingredients

Cake

  • 1 box French Vanilla Super Moist Cake Mix
  • 1 ½ teaspoons Baking Powder
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 15 ounces Ricotta Cheese
  • 4 Egg
  • ½ cup Olive Oil
  • ½ cup Almond Extract
  • ¾ cup Heavy Cream

Frosting

  • 1 cup Confectioners Sugar
  • 3 tablespoons Heavy Cream or enough to make it pourable
  • ½ teaspoon Vanilla Extract
  • ½ teaspoon Almond Extract

Instructions

Cake

    Mix the cake mix with baking powder, baking soda and salt in a bowl.

    In another bowl beat the ricotta, eggs, olive oil, almond extract and heavy cream.

    Start beating in the dry ingredients and combine well.

    Transfer to a 9" prepared springform pan and bake at 325 for about an hour.

    Let cool completely before removing from pan.

Frosting

    Mix the confectioners sugar with the heavy cream a little at time until it's pourable and stir in the extracts.
  2. 2
    Pour over the cake and sprinkle with non pareils.
