Ingredients
Crust
- ½ cup Butter
- 1 cup Flour
- ¼ cup Powdered Sugar
Lemon Filling
- 2 tablespoons Lemon Juice
- 2 Eggs Beaten
- 1 cup Sugar
- 2 tablespoons Flour
- ½ teaspoon Baking Soda
Instructions

1Preheat your oven to 350°F.

2Mix the butter, 1 cup of flour, and 1/4 cup of powdered sugar until combined.

3Press the mixture firmly into an 8-inch square pan.

4Bake for 15 minutes. (Note that the crust will not look fully done at this stage.)

5While the crust bakes, whisk together the lemon juice, beaten eggs, 1 cup of sugar, 2 tbsp of flour, and the baking powder.

6Pour the lemon mixture over the warm crust.

7Return to the oven and bake for another 25 minutes, or until the center is set.

8Allow the bars to cool completely.

9Once cooled, sprinkle the top generously with powdered sugar before slicing into bars.
