Ingredients

Crust

  • ½ cup Butter
  • 1 cup Flour
  • ¼ cup Powdered Sugar

Lemon Filling

  • 2 tablespoons Lemon Juice
  • 2 Eggs Beaten
  • 1 cup Sugar
  • 2 tablespoons Flour
  • ½ teaspoon Baking Soda

Instructions

    Preheat your oven to 350°F.

    Mix the butter, 1 cup of flour, and 1/4 cup of powdered sugar until combined.

    Press the mixture firmly into an 8-inch square pan.

    Bake for 15 minutes. (Note that the crust will not look fully done at this stage.)

    While the crust bakes, whisk together the lemon juice, beaten eggs, 1 cup of sugar, 2 tbsp of flour, and the baking powder.
