Ingredients

  • ¾ cup Long-grain Rice
  • 1 ½ cups French Fried Onions
  • ½ teaspoon Italian Seasoning
  • 1 ¾ cups Chicken Broth
  • 4 Chicken Breast Halved
  • 0.3 cup Italian Salad Dressing
  • 16 ounces Mixed Vegetables Frozen

Instructions

    Preheat oven to 400°F (205°C).

    In a 9×13-inch baking dish, combine the rice, 1 cup of the French-fried onions, and Italian seasoning.

    Pour the chicken bouillon evenly over the rice mixture.

    Arrange the 4 chicken breasts on top of the rice.

    Pour the Italian dressing over the chicken.

    Cover the dish with foil and bake for 30 minutes.

    Remove foil.

    Spread or arrange the frozen vegetables around the chicken, covering most of the rice.

    Return to the oven and bake 20–25 minutes, or until the chicken is fully cooked (internal temperature 165°F) and the rice is tender.

    Top the chicken with the remaining ½ cup French fried onions.

    Return to the oven for an additional 5 minutes, or until the onions are golden.

    Let rest 5 minutes before serving.
